Ingredients
- 4 lobster tails (5 to 6 oz each)
- 1 Tbsp finely chopped fresh parsley, plus more for garnish
- 2 garlic cloves, pressed
- 1 tsp dijon mustard
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 1/2 Tbsp olive oil
- 1 1/2 Tbsp fresh lemon juice
- 4 Tbsp unsalted butter, divided
Directions
- Preheat the oven to 425°F (220°C).
- Prepare the lobster tails by cutting the shell and lifting the meat to sit above the shell.
- In a small bowl, combine parsley, garlic, mustard, salt, pepper, olive oil, and lemon juice.
- Place lobster tails on a baking sheet. Brush each tail with the lemon garlic mixture and dot with pieces of butter.
- Bake for about 10 minutes or until the lobster meat is opaque and lightly browned.
- Garnish with additional parsley and serve immediately.
