Ingredients

  • 1 teaspoon garlic salt
  • 1 cup shredded Monterey Jack cheese
  • ¾ cup water
  • 1 (1.5 ounce) package dry enchilada sauce mix
  • ½ teaspoon onion powder
  • 1 (16 ounce) can refried beans
  • 1 ½ pounds ground beef
  • 1 (12 ounce) package corn tortillas
  • 1 cup shredded Cheddar cheese
  • 1 (6 ounce) can tomato paste

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef with garlic salt and onion powder until browned.
  3. Stir in the enchilada sauce mix, tomato paste, and water. Simmer for 5 minutes.
  4. Spread a layer of refried beans on the bottom of a baking dish.
  5. Place a layer of tortillas over the beans, followed by a layer of the beef mixture, and sprinkle with Monterey Jack and Cheddar cheese.
  6. Repeat the layers, ending with a cheese layer on top.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.

Cook Notes

  • Adjust the seasoning according to taste.
  • For a spicier version, add chopped jalapeños to the beef mixture.
