Italian Spinach Pizza

Print Friendly, PDF & Email

Every Sunday, when we had company, my mother would whip this pizza together within minutes. My sisters and I would sit and watch, sometimes not so patiently, for it to come out of the oven. She would make a slightly different version of it every time but it always started with spinach. Such wonderful memories and tasty recipes past down for all of us.
-It’s really very simple. Divide the 1lb. of bread dough in half and roll each half into a rectangle. To make it easier for you, turn the rectangles so that one long side of each rectangle is facing you. Now, continue the recipe, browning the sausage and adding the spinach to it. Next, take half of the provolone and scatter it across the lower half of the dough rectangle and repeat with the rest of the provolone on the next half of dough. Now, take half of the spinach mixture and place it on one of the triangles on top of the provolne and repeat using the rest of the spinach mixture on the other rectangle. Now continue with the grated cheese and mozzarella on each one, then fold the top of each rectangle over the filling, press to seal and viola!!!! Delicious by the way and congrats on the blue ribbon.
-Sounds and looks fantastic. I’d only have to leave out the sausage or make it turkey sausage, since my mom won’t eat pork sausage. Can’t wait to try it! Thanks
