ITALIAN DRUNKEN NOODLES

Ingredients:

  • 1 lb Italian sausage
  • 1 1/2 tsp salt
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 orange pepper, diced
  • 4 cloves garlic, pressed
  • 1/2 cup white wine (like Chardonnay)
  • 1 can (28 ounces) diced tomatoes with juice
  • 2 Tbsp parsley
  • 1/4 cup fresh basil
  • 8 oz egg noodles

Directions:

  1. Cook the sausage with seasonings and diced peppers.
  2. Add garlic, wine, and diced tomatoes, simmering to create a flavorful sauce.
  3. Cook the egg noodles separately and combine with the sauce.
  4. Garnish with fresh herbs before serving.

Cook Notes: Adjust the seasoning to taste, and ensure the noodles are cooked al dente.

  • Substitute the sausage with chicken or beef for a different protein option.
  • Add other vegetables like spinach or mushrooms for extra nutrition.

Keto Version: Replace egg noodles with zucchini noodles or another low-carb alternative, and check for added sugars in canned tomatoes.
