How to Make Instant Pot Whole Chicken

Ingredients:

  • 1 whole chicken (3-4 pounds)
  • 2 tablespoons salted butter (softened)
  • 1 tablespoon fresh chopped rosemary (plus 2-3 sprigs)
  • 1 tablespoon fresh chopped thyme (plus 2-3 sprigs)
  • 2-3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1 small onion (halved)
  • 1 cup chicken broth

Directions:

  1. Mix the butter, chopped rosemary, chopped thyme, minced garlic, and salt in a small bowl.
  2. Gently loosen the skin on the breast and legs of the chicken, creating pockets. Rub the butter mixture under the skin.
  3. Place the onion, thyme, and rosemary sprigs inside the cavity of the chicken. Tie the legs together with twine and tuck the wings under the legs.
  4. Pour chicken broth into the Instant Pot, place the trivet inside, and set the chicken on top. Dot the remaining butter mixture on the chicken.
  5. Seal the Instant Pot and cook on high pressure for 6 minutes per pound, adding 4 minutes per half-pound.
  6. Allow natural pressure release for 15 minutes, then manually release.
  7. Remove the chicken from the Instant Pot and broil for a few minutes to brown the skin if desired.
  8. Remove twine, slice or shred the chicken, and serve.
