Ingredients

Crepes:

  • 2 cups milk
  • 4 eggs
  • 3 Tbsp. butter, melted
  • 1 Tbsp. sugar
  • 1 1/2 Tbsp. vanilla
  • 1/8 tsp. salt
  • 1 1/2 cups flour

Cream Cheese Filling:

  • 1 – 8 oz. package cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 1 Tbsp. lemon juice
  • 3/4 tsp. vanilla

Whipped Cream:

  • 1 cup heavy whipping cream
  • 4 Tbsp. powdered sugar

Topping:

  • 4 cups strawberries, sliced

Directions

  1. For crepes: Blend milk, eggs, melted butter, sugar, vanilla, salt, and flour until smooth. Let the batter rest for 30 minutes.
  2. Cook the crepes in a non-stick skillet over medium heat, flipping once until lightly golden.
  3. For the filling: Mix cream cheese, powdered sugar, lemon juice, and vanilla until smooth.
  4. Whip the heavy cream with powdered sugar until stiff peaks form.
  5. Assemble the crepes with a layer of cream cheese filling, a dollop of whipped cream, and topped with sliced strawberries.

Cook Notes

  • The batter can be made the night before and refrigerated.
  • For thinner crepes, add a little more milk to the batter.

Variations

  • Chocolate Crepes: Add cocoa powder to the crepe batter.
  • Berry Medley: Use a mix of berries instead of just strawberries for the topping.

Keto Version

Use almond flour and a keto-friendly sweetener for the crepes, and a sugar-free cream cheese filling.

Low-Carb Version

Substitute regular flour with a low-carb flour alternative and use a low-carb sweetener in place of sugar.
