Ingredients

Cream Cheese Filling:
- 1 – 8 oz. package cream cheese, softened
- 1 1/4 cups powdered sugar
- 1 Tbsp. lemon juice
- 3/4 tsp. vanilla
Whipped Cream:
- 1 cup heavy whipping cream
- 4 Tbsp. powdered sugar
Topping:
- 4 cups strawberries, sliced
Directions
- For crepes: Blend milk, eggs, melted butter, sugar, vanilla, salt, and flour until smooth. Let the batter rest for 30 minutes.
- Cook the crepes in a non-stick skillet over medium heat, flipping once until lightly golden.
- For the filling: Mix cream cheese, powdered sugar, lemon juice, and vanilla until smooth.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Assemble the crepes with a layer of cream cheese filling, a dollop of whipped cream, and topped with sliced strawberries.
Cook Notes
- The batter can be made the night before and refrigerated.
- For thinner crepes, add a little more milk to the batter.
