Ingredients

  • 2 pounds ground beef – extra lean or ground turkey

  • 1 can Rotel tomatoes
  • 8 medium carrots, thinly sliced
  • 4 celery ribs, thinly sliced
  • 2 medium potatoes, peeled and cubed
  • A handful of fresh mushrooms
  • 1.5 cans low sodium beef broth
  • 1 to 2 tablespoons salt
  • 1 to 2 teaspoons pepper

Directions

  1. Brown the Meat: In a large pot, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  2. Sauté the Vegetables: Add the chopped onions to the pot and sauté until they are translucent.
  3. Combine Ingredients: Stir in the stewed and Rotel tomatoes, carrots, celery, potatoes, and mushrooms. Pour in the beef broth, and season with salt and pepper.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes to an hour, or until the vegetables are tender.
  5. Adjust Seasonings: Taste the stew and adjust the seasonings as necessary.
  6. Serve: Ladle the stew into bowls and serve hot.

  • For a thicker stew, you can dissolve a tablespoon of cornstarch in a little cold water and stir it into the stew towards the end of cooking time until the desired consistency is reached.
