Ingredients
- 2 lbs baby red potatoes, cut into 1 – 1 1/2 inch pieces
- 1 onion, sliced into thick half circles
- 1 red bell pepper, cut into 1-inch pieces
- 8 oz smoked sausage or kielbasa, cut into 1-inch pieces
- 8 oz fresh mushrooms, cut in half or quarters
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1 teaspoon fresh thyme
- 1 Tablespoon spice/dry herbs blend
- Salt, to taste
- Ground black pepper, to taste
- Fresh herbs, minced (parsley, thyme, chives, dill, etc)
Directions
- Heat olive oil in a large skillet over medium heat.
- Add potatoes and cook until they start to soften and brown, stirring occasionally.
- Add onions, bell pepper, mushrooms, and smoked sausage. Cook until vegetables are tender and sausage is browned.
- Stir in garlic, thyme, and spice/herb blend. Season with salt and pepper.
- Cook for another 5 minutes, then sprinkle with fresh herbs before serving.

- The spice/herb blend can be any combination of your favorite flavors. Paprika, Italian seasoning, or Cajun spice are great options.
- Adjust the cooking time based on the size of your potato pieces.
