Ingredients

  • 2 lbs baby red potatoes, cut into 1 – 1 1/2 inch pieces
  • 1 onion, sliced into thick half circles
  • 1 red bell pepper, cut into 1-inch pieces
  • 8 oz smoked sausage or kielbasa, cut into 1-inch pieces
  • 8 oz fresh mushrooms, cut in half or quarters
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon fresh thyme
  • 1 Tablespoon spice/dry herbs blend
  • Salt, to taste
  • Ground black pepper, to taste
  • Fresh herbs, minced (parsley, thyme, chives, dill, etc)

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add potatoes and cook until they start to soften and brown, stirring occasionally.
  3. Add onions, bell pepper, mushrooms, and smoked sausage. Cook until vegetables are tender and sausage is browned.
  4. Stir in garlic, thyme, and spice/herb blend. Season with salt and pepper.
  5. Cook for another 5 minutes, then sprinkle with fresh herbs before serving.

Cook Notes

  • The spice/herb blend can be any combination of your favorite flavors. Paprika, Italian seasoning, or Cajun spice are great options.
  • Adjust the cooking time based on the size of your potato pieces.

Variations

  • Vegetarian: Substitute smoked sausage with a plant-based sausage alternative.
  • Spicy: Add chili flakes or cayenne pepper for a kick of heat.

Keto Version

Replace potatoes with cauliflower florets to make a keto-friendly version of this dish.

Low-Carb Version

Use a smaller amount of potatoes and increase the quantity of mushrooms and bell peppers for a lower carb count.
