Ingredients
- 17.6 ounces (500 grams) of potatoes
- 1 onion
- 3.5 ounces (100 grams) of hard cheese, grated
- 1 tomato, finely chopped
- 2 tbsp of flour
- 1 egg
- Green onions, finely chopped
- Salt and pepper to taste
- Herbs de Provence
- Vegetable oil for frying
Directions
- Peel and grate the potatoes and onion. Transfer to a colander and press out as much liquid as possible.
- In a large bowl, mix the grated potatoes and onion with the grated hard cheese, chopped tomato, flour, egg, green onions, salt, pepper, and Herbs de Provence until well combined.
- Heat a thin layer of vegetable oil in a skillet over medium heat. Spoon the potato mixture into the skillet, flattening it into pancakes with the back of the spoon.
- Fry for 3-4 minutes on each side, or until the pancakes are golden brown and crispy. Drain on paper towels to remove excess oil.
