The Cream Pie’s traditional flavors are turned into this fun cookie cup that is super easy because it’s made with a cake mix. The shortcuts are delicious and super fabulous for this recipe. I can’t wait for you to post them!
In fact we can all agree on something!!!! On the planet, there’s no mum who wouldn’t love these Boston Cream Pie Cookie Bites. I’m a mom who prefers not to have my children buy me anything for Mother’s Day. BUT if anyone wanted to make a cookie for me, yeah, that’d be a great treat.
Cookies are the universal token of love after all or at least in my world they are, and these little bits couldn’t be any sweeter!!!
INGREDIENTS:
TO MAKE THE COOKIES:
–One box Of yellow-cake-mix.
–2 large eggs
–1/3 C.Of -softened- butter
TO MAKE A HOMEMADE WHIPPED CREAM:
–1 C.Of heavy whipping cream.
–1 Large PKG.Of instant vanilla pudding.
–1/2 C.Of milk.
TO MAKE A CHOCOLATE GANACHE:
–2 TBSP.Of semisweet baking chips.
–2 TBSP.Of heavy whipping cream.
DIRECTIONS:
TO MAKE THE COOKIES:
–Step 1_Preheat the oven to 350 degrees Fahrenheit and spray each cup with nonstick cooking spray to prepare a mini muffin tin.
–Step 2_In a medium cup, apply the yellow cake mix and sweep to eliminate any lumps.
–Step 3_Add the softened butter and eggs to the cake mix and combine until the dough is thick and sticky with a handheld mixer.
–Step 4_Put a mound of cookie dough into each muffin cup, using a little cookie scoop.press the mound of dough down to create a level cookie with your fingertips. And bake For 15 minutes.
–Step 5_Remove it from the oven and insert a spatula immediately and loop it around the edge of each cookie to remove it from the pan.
–Step 6_When cooled, go back and press down the center of the cookie and create an indentation using a tart shaper.
–Step 7_Move the cookies to the cooling rack and let them completely cool down.
THE HOMEMADE CREAM VANILLA
–Step 8_Combine the instant vanilla pudding mix with the heavy cream and milk in a medium bowl.
–Step 9_Mix these ingredients with a mixer, until the mixture is dense and has stiff peaks.
–Step 10_In a Ziplock bag, transfer vanilla cream, and pipe a generous amount of cream into each cookie.
THE CHOCOLATE GANACHE
–Step 11_Combine the heavy cream and the semisweet chocolate chips in a safe microwave bowl for 30 seconds in the microwave and whisk. When you get a silky and smooth consistency, you’re done. If not, you need to add 10 more seconds before you have done so.
–Step 12_Spoon on the top of each cookie cup with a half teaspoon of ganache.
–Step 13_Refrigerate the cookies until the ganache and the vanilla cream set for around 2 hours, then serve.
