CRANBERRY ORANGE CAKE

Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1 cup sugar
  • 3 large eggs
  • Zest of one orange (about 1 tablespoon)
  • Juice of one orange
  • 1/2 cup butter, melted
  • 2 tablespoons sugar (for coating cranberries)
  • 1 1/2 cups fresh cranberries

For the Icing:

  • 1 cup powdered sugar
  • 2 – 3 tablespoons water, milk, or orange juice

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat together sour cream, sugar, eggs, orange zest, and orange juice.
  4. Gradually mix the dry ingredients into the wet ingredients. Stir in the melted butter.
  5. Toss cranberries with 2 tablespoons of sugar and fold them into the batter.
  6. Pour the batter into the prepared pan and bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool, then drizzle with icing made by whisking powdered sugar with water, milk, or orange juice.
