Ingredients
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup sour cream
- 1 cup sugar
- 3 large eggs
- Zest of one orange (about 1 tablespoon)
- Juice of one orange
- 1/2 cup butter, melted
- 2 tablespoons sugar (for coating cranberries)
- 1 1/2 cups fresh cranberries
For the Icing:
- 1 cup powdered sugar
- 2 – 3 tablespoons water, milk, or orange juice
Directions
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat together sour cream, sugar, eggs, orange zest, and orange juice.
- Gradually mix the dry ingredients into the wet ingredients. Stir in the melted butter.
- Toss cranberries with 2 tablespoons of sugar and fold them into the batter.
- Pour the batter into the prepared pan and bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool, then drizzle with icing made by whisking powdered sugar with water, milk, or orange juice.
