Comforting Chicken & Noodles Crock Pot

Ingredients

  • 1 (24-ounce) package frozen egg noodles
  • 2 (14.7-oz) cans cream of chicken soup (or one can chicken and one can cream of celery for variation)
  • 1 stick (1/2 cup) butter, cut into pieces
  • 1 (32 oz) chicken broth, more if needed to thin out
  • Mixed vegetables, optional
  • Chicken bouillon to taste, optional (about a teaspoon of Better Than Bouillon chicken-flavored paste recommended)
  • 6 small boneless, skinless chicken breasts or 4 large
  • Salt & pepper to taste, parsley optional for garnish

Directions

  1. Place the chicken breasts at the bottom of the crock pot. Season with salt and pepper, and if using, parsley.
  2. In a separate bowl, mix the cream of chicken soup (and cream of celery, if using) with the chicken broth until well combined. If desired, stir in chicken bouillon for a richer flavor.
  3. Pour the soup and broth mixture over the chicken in the crock pot. Add the butter pieces evenly across the top.
  4. Cover and cook on low for 5 hours.
  5. After 5 hours, shred the chicken in the pot using two forks. Add the frozen egg noodles and mixed vegetables, if using. Stir well.
  6. Continue to cook on low for another hour, or until the noodles are tender and cooked through.
  7. Adjust the seasoning with additional salt and pepper, if needed. If the mixture is too thick, thin it out with more chicken broth until your desired consistency is reached.
  8. Serve warm, garnished with parsley if desired.

Cook Notes

For a lighter version, you can use low-fat versions of the cream of chicken soup and substitute the butter with a lighter alternative.

  • Keto Version: Substitute the egg noodles with shirataki noodles or spiralized vegetables for a low-carb alternative. Use a keto-friendly cream soup substitute.
