Ingredients:

1 tbsp all-purpose flour

1/2 tsp salt

1 and 1/2 tbsp cornstarch

1 tsp Shaoxing wine (Optional)

1 pound (450 g) raw shrimp, peeled & deveined

Sauce

2 tbsp brown sugar

2 tsp light soy sauce (or soy sauce)

1/4 c chili garlic sauce (homemade or store-bought)

Stir Fry

1 tbsp ginger, minced

4 1/2 tbsp peanut oil (or vegetable oil)

Directions:

In a mixing bowl, add Shaoxing wine, salt, and shrimp. Toss until well mixed.

In another mixing bowl, add all the ingredients for the sauce. Stir until well blended. Make sure to dissolve the sugar completely.

Place a skillet on the stove and turn the heat to medium.

Add 4 tbsp of oil and allow it to become hot.

Add flour and cornstarch over the shrimp, then toss until well coated.

Add the shrimp into the hot skillet, then cook for about 3 minutes or until cooked through. Cook the shrimp in two batches to prevent overcrowding. Transfer the shrimp onto a clean plate.

In the same skillet, add half a tbsp of oil and allow it to become hot.

Add ginger, then sauté for a minute or until aromatic.

Pour in the sauce, then scrape the bottom of the skillet to get the browned bits. Stir until well blended. Simmer for about 30 seconds or until thick.

Remove the skillet from the heat.

Put the shrimp back into the skillet, then toss until well coated with the delicious sauce.

Serve right away. Enjoy!
