- 1 lb skinless smoked sausage (Eckrich is my favorite brand)
- ⅛ tsp paprika

- Put the cooked and diced potatoes in a 2-quart casserole dish. Add the cooked sausage and gently toss.
- In a saucepan over medium heat, mix butter, flour, milk, salt, pepper, Velveeta cheese until warm, melted, and smooth. Stir constantly.
