Over the years I have gleaned many a good recipe from my assistant and this is one.
What a great find..love these! “Crushed slightly”, I just took a handful at a time of the cup of Rice Krispies and crunched in my hand. That left some nice little crunch in the finished product..fun:) I was going to do pre-shredded sharp cheese but went with an 8 oz block of extra sharp and hand grated, adding a little extra cayenne to my taste..reminded me of Cheese Straws, which I love. Great flavor! By mistake, I softened the butter too long (in microwave) to where it melted, and it still worked fine in the batter, just made sure to spend a little extra time working it into batter. After that sample batch, I will be making more, wrapped up real pretty, to give as little gifts on Mother’s Day. They are so good and addictive! Thanks for sharing a great recipe!
-I made these and we loved them! I made a one-step alteration at the end…I rolled the dough into a log roughly 18″ long and wrapped it tightly in waxed paper. Refrigerated for a couple of hours (can be more or less time) then sliced it into approximately 36 wafers. It worked perfectly for a lazy person like me! A roll of these with baking instructions attached would make a perfect addition to a gift basket for a friend!
