Prepare Time
- Preparation Time: 15 minutes
- Cooking Time: 30 minutes
- Total Time: 45 minutes
Ingredients
- 1 pound spicy Italian sausage
- 1/2 pound bacon, chopped
- 7 cups water
- 3 chicken flavored bouillon cubes
- 2 large russet potatoes, scrubbed clean and cubed
- 2 cloves garlic, chopped
- 1 medium onion, chopped
- 2 cups chopped kale
- 1 cup heavy whipping cream
- Salt and pepper, to taste
Directions
- In a large pot over medium heat, cook the spicy Italian sausage until browned and crumbled. Remove the sausage from the pot and set aside.
- In the same pot, add the chopped bacon and cook until crisp. Remove the bacon and set aside, leaving the drippings in the pot.
- Add the chopped onion and garlic to the pot, cooking until the onion is translucent.
- Pour in the water and add the chicken bouillon cubes, stirring until the cubes are dissolved.
- Add the cubed potatoes to the pot and bring the mixture to a boil. Reduce the heat and simmer until the potatoes are tender, about 10-15 minutes.
- Return the cooked sausage and bacon to the pot. Add the chopped kale and simmer for another 5 minutes, until the kale is wilted and tender.
- Stir in the heavy whipping cream and season with salt and pepper to taste. Heat through, but do not boil, then remove from heat.
- Serve hot, with optional garnishes if desired.
Cook Notes
For an even richer flavor, you can substitute part of the water with chicken stock or broth. Adjust the seasoning accordingly, depending on the saltiness of your stock.
