Preheat oven to 350°F.
Cover a cookie sheet with tin foil or parchment paper. Lightly coat with cooking spray, olive or coconut oil to prevent cookies from sticking to the baking sheet.
Mix all of the ingredients together in a large bowl, using your hands or a soft spatula.
Scoop about a tablespoon or so of the mixture and roll into a small ball, flatten slightly to form a round cookie. Place cookie on the prepared baking sheet. Bake for 15-20 minutes.
