A classic chicken salad is one of the most popular summer salads. It’s a great choice for a picnic, barbecue or office potluck. You can make a cold, creamy chicken salad with just a few ingredients or use it as filling to make a homemade chicken salad sandwich.

This easy recipe is great for making sandwiches quickly when you have to make them for last-minute invites. This summer, serve it with an Italian pasta salad and crunchy grilled corn!

  • Reuse leftovers from last night’s meal, leftover rotisserie chicken, or leftover grilled chicken.
  • How to Make Chicken Salad I like to use poached or baked chicken breasts, thighs or legs.
  • Can you use canned chicken for a pinch? But fresh is always better.
  • Once the chicken has cooled, shred it or chop it into bite-sized pieces.

Ingredients:
•2 ( 12.5 oz) cans of chicken (or 3 cups diced cooked chicken)
•3/4 cup light mayonnaise
•1 cup red grapes, halved
•1 green onion, diced
•1 stalk celery, diced
•1/2 cup diced apple
•salt and pepper to taste
•pecans or cashews, optional

Directions
1.In a bowl, combine the chicken, mayo, grapes, green onion, celery, apple, salt, and pepper. Combine until well blended.
2.Serve on rolls, bread, or croissants sprinkle with some cashews or pecans. This can also be served on a lettuce leaf.
